Loaded Baked Potato

Serves: 4
  • 4 large white potatoes
  • ½ tbsp. olive oil
  • ½ tsp salt
  • 2 cups corn, grilled or fried
  • 4 tsp vegan butter
  • 8 tbsp hummus
  • 2 jalapeños, thinly sliced
  • handful of spinach
  • 1 avocado, cut in half, pit removed and sliced
  1. Preheat oven to 175C/350F.
  2. Using a fork prick holes all over the potato. Repeat this for all 4 potatoes. Rub the potatoes in the olive oil and salt making sure they are fully coated.
  3. If you prefer your potatoes without a crispy skin wrap it in aluminium foil before placing it in the oven.
  4. Place the potatoes in the oven for 60-75 minutes until the potatoes are tender. You check this by grabbing the largest potato and pricking it with a fork. If the fork goes in with no resistance the potatoes are done.
  5. While the potatoes are roasting prepare your other ingredients and grill or fry your corn.
  6. Once the potatoes are done remove them from the oven and cut them with halfway to create an opening for the fillings. Place the vegan butter in the potato and wait for it to melt. Once melted layer the potatoes with the fillings.
