Every since you were young your parents probably told you that eating breakfast is the best way to start your day. When I was younger my parents definitely forced me to eat “breakfast”. Now to put that in context when I was young my “breakfast” was cereal with milk, and like every other child my cereal was the type with cartoons and birds on it to try and persuade children to eat it.
The reason I used to eat cereal even as an adult was due to my morning laziness. I don’t like getting up out of bed and I will try and linger in bed as long as I can. Thankfully while getting older I have become a bit more aware of what my body actually needs in the morning, shockingly enough it’s not sugar.
Unfortunately, I am still as lazy as I can be so every breakfast I make has to be simple and quick to make. I have shared a few easy and quick recipes before but I thought it was time to share another one of my favourites. This hummus breakfast toast is probably the easiest breakfast so far as you can prepare every single thing the night before. All you need to do in the morning is toast some bread, slap the hummus, cucumber, tomato and alfalfa on it and you’re done. You can have this breakfast ready in less than 5 minutes and it has everything you could want. It is filling, healthy and provides you with all the energy you need to keep you going till lunch.

- 2 bread slices
- 2 tbsp humus
- ¼ cucumber, finely sliced
- 1 tomato, sliced
- salt, to taste
- alfalfa, to garnish
- Toast the bread.
- Spread the hummus over the toast.
- Top with the cucumber sliced and tomato sliced.
- Sprinkle with salt and garnish with the alfalfa.
