Iced Espresso

This drink is a real treat for all the coffee addicts around. This iced espresso takes only 5 minutes to make and is perfect for a warm summer day.

At some point in my life I started drinking coffee. I used to hate coffee but then thanks to the sugar bomb also known as Starbucks I was introduced to my first coffee that I didn’t utterly hate. If I recall correctly I started drinking their vanilla latte’s which really was just sugar in a cup with half a coffee bean tossed in for good measure.

Ever since then I have slowly graduated to less sugary concoctions. I slowly made my way from vanilla latte to mochaccino without sugar to latte’s and eventually to a flat white. For those of you who don’t know what a flat white is. It’s a latte minus the foam and just more milk. Which I drink because I have slowly grown accustomed to soy milk (thank you sugar) but I still can’t stomach soy foam.

Now this week I purchased a Nespresso machine. I already owned a manual espresso machine however it was just a pain to use and the lack of counter space meant it got shoved in a small corner which made it even worse. I think that the machine was used a total of once since we moved down to Melbourne.

Iced Espresso

So, in an effort to cut down on my coffee spending (let’s not talk about the coffee budget) I purchased a Nespresso machine. It has made making coffee so much quicker and easier which means I can now have icy goodness with breakfast in the morning.

This iced espresso is the bomb! It is made with almond milk and naturally sweetened with dates. You just chuck everything in a blender and voila! Iced espresso.

Serves: 1
Ingredients
  • 2 shots espresso
  • 1 cup soy milk
  • ½ tsp vanilla
  • 2 dates, soaked
  • ½ cup ice cubes
Instructions
  1. Put all ingredients in a blender and process until smooth.
Notes
Ideally soak the dates overnight. If you are short on time soak the dates in boiling water for 30 minutes.
