From crazy sweet smoothies that are entirely full of fruit and juice to one of the greenest smoothie you can imagine. That growth only took me about 5 months. If you told me 8 months ago I would have given up on ice cream I probably would have thought you had lost your mind. Now if you told me I would be voluntarily drinking a kale smoothie I would have most likely laughed very loudly in your face.
However, here we are. I am voluntarily drinking something that closely resembles mud. And this is my 3rd time making this smoothie, even though the first two times were not very successful. So it turns out that even though there has been growth and development in me eating and drinking healthier there is still a limit.
On my first two tries of this smoothie I made it entirely smooth and kept the blender running for a bit longer, that was just too much too soon. This time I made the smoothie slightly chunkier which means there are actually small pieces of parsley and kale left in the smoothie. Personally I found this much easier to stomach than a perfectly smooth smoothie.
Hopefully I can slowly move on to smooth smoothies but let’s take this one week at a time.

- 1 cup kale
- ½ cup parlsey
- ½ cup frozen strawberries
- 1½ cup soy milk
- Put all ingredients in a blender and process until smooth.
