Last week I went for breakfast with a friend. We usually go to the exact same place and order the exact same food. However she was house sitting so we were forced to venture out to a new breakfast place.
I am very happy that we were forced into a new café for 2 reasons. The menu had multiple vegan options on the menu. And by vegan and I mean proper meal vegan options. And secondly this café sold cold drip coffee which is by far my favourite coffee.
This quinoa toast is an adaption of the dish I had that morning. The dish I had that morning used quinoa, avocado, corn and some extra vegetables. Since I am lazy as all fuck I simplified it for me and for you. I dropped the extra veggies and just upped the amount of corn to make this a delicious and satisfying breakfast.
If you have some more time and motivation in the morning you can very easily expan on this breakfast by adding some sautéed vegetables. I have made this for lunch and this quinoa toast pairs very well with sautéed mushrooms, onion and bell pepper. But if you are like me and have no motivation in the morning just make this quick quinoa toast breakfast.

- 1 cup quinoa
- 1 cup frozen corn
- 4 pieces of toast
- 1 avocado, cubed
- Cook the quinoa according to the package instructions and leave to cool for 10-20 minutes.
- Meanwhile fry the corn over high heat until slightly charred.
- Toaste the bread slices and topped with the avocado, add ½ cup of cooked quinoa per slice of toast and ¼ cup of corn per piece of toast.
- Serve immediately.
