I have previously talked about my requirements for breakfast when talking about another breakfast staple. Easy, delicious and it has to be able to be made in 10 minutes or less. I am not a morning person (I am writing this at 2AM to avoid having to get up in the morning to write this). So my breakfast has to be equally lazy. Most of my breakfasts revolve around avocado’s or smoothies. And ideally something I can prepare the night before. This smashed avocado is no exception.
Usually if I want to eat this I will prepare it the night before just before I go to bed. I will make the smashed avocado, store it in the fridge and pre slice the tomato. All I have to do in the morning is toast the bread and toss everything onto it.
If you forget to prepare this the night before it will only take you 10 minutes max in the morning.
Smashed avocado is something that comes in many many variations in Australia. The basic premise is fairly simple. All you need is avocado, lime or lemon, salt and usually feta.
For my way of making smashed avocado toast I use avocado, lime and salt. Then top this with tomato and generously pour balsamic glaze over it. The combination of salt and avocado with balsamic vinegar is AMAZING.
- 2 slices of toasted sourdough bread
- 1 avocado
- 1 lime
- ¼ tsp salt
- 1 tomato, cut into slices
- balsamic glaze
- Toast the sourdough bread.
- Put the avocado, lime and salt in a mixing bowl and mash with a fork until just combined.
- Put the smashed avocado on the toasted sourdough, top with the tomato slices and generously drizzle with balsamic glaze.
