A easy and quick breakfast you can prepare in advance. This vegetable breakfast sandwich is a delicious combination of vegetables and hummus to get you started in the morning. Since you can prepare this breakfast the day before you only need 2 minutes to get it ready in the morning.
I think the one thing I have written about most is how lazy I am in the morning. I am a perpetual snoozer and will drag out my time in bed as much as I can. I have turned getting ready in 10 minutes into an Olympic sport.
So it probably comes as no surprise that most of my breakfasts are quick and easy. There are some exception like this scrambled tofu taco, however this is weekend food. This vegetable breakfast sandwich on the other hand is perfect for a week day. I was inspired to create this based on a sandwich I used to eat.
When I was younger my favourite food was mayo and surprisingly there was a sandwich bar in my city that made a mayo and vegetable sandwich. Now this sandwich was slightly less healthy and used some less healthy fillings but it was delicious! So I set out to make a vegan alternative to this sandwich. And what does one use to replace the mayo? Hummus!
To make the vegetable mixture you can use the vegetables I listed below, if you have other vegetables at home you want to use feel free to experiment. You can use most vegetables in this sandwich.

- 1 red bell pepper, seeds and membrane removed and cut into small pieces
- 3 celery stalks, cut into small pieces
- 1 400g/14oz can chickpeas, drained and rinsed
- 1 red onion, finely diced
- 1 cup hummus
- ¼-1/2 tsp salt
- ¼ tsp cayenne pepper (optional)
- In a large mixing bowl combine all ingredients but the spices.
- Add the spices to taste.
- Serve the hummus vegetable mixture on top of toast or in between slices of fresh bread.
